Our chef

Chef Alain Pignard built his reputation at the prestigious 5-star hotel Fairmont The Queen Elizabeth in Montreal for 26 years. In 2005 he was elected the Best Chef of Quebec. His culinary philosophy favours a diverse and accessible cuisine firmly grounded in both European and North American traditions. He ardently promotes the use of Quebec’s artisanal products and local ingredients.

Before establishing himself in Montreal, Alain practiced in other major cities of the world, including Paris, Rome and London.

Pastry Chef

With his pastry chef award, he has been experimenting in very good houses, as La Gascogne, Marius and Fanny, Gourmet and Chocolate Privilege, Then as Chocolatier Chef à l'Amour du chocolat and at Fairmont Le Reine Elizabeth. That’s where he met Chef Alain Pignard. He told him about his plan to open a pastry shop and caterer “La Palette gourmande”.

Chef Alain Pignard has long been his mentor, and thanks to him, in 2016, for the second year in a row, Christian Campos was elected pastry chef of the year by the Société des chefs, cuisiniers et pâtissiers du Québec.
